What MEHKO means. Happy Roots cooks under California's Microenterprise Home Kitchen Operation (MEHKO) license — a state-permitted, inspected home kitchen. It's not a restaurant; every meal is cooked to order, not held in a warmer. The 36-hour notice is what lets us do that honestly.
